A      300g self-rising flour
        1 tsp baking powder
        1 tbsp dark cocoa powder


B     2 eggs, lightly beaten

        200mL milk
        2-4 tsp of chocolate essence


C     50g unsalted butter
        160g Crystalline Fructose


1.  Mix A in a large bowl.
2.  Mix B in another separate bowl.
3.  For C, melt butter in a bowl using the *hot water bath method. Then, fold in liquid butter with Crystalline Fructose.
4.  Mix B in C and fold in A lightly until batter are well mixed.
5.  Preheat the oven to 150˚C
6.  Spoon batter in until ¾ of the muffin cups, grease the remaining ¼ sides of the cups and bake for 15 minutes or until   risen, golden and firm to touch.
7.  REMEMBER to let muffins COOL to fully enjoy the sweetness of Crystalline Fructose.
